Festive gluten-free cooking class

If you want to learn how to cook the perfect roast to impress your family this Christmas, join Kurt Lovell for his Christmas cooking class.

The three-hour cooking class will be hosted at Kurt’s café, Project Salubrious on Friday, December 1 and will follow the café's philosophy of no gluten, grains, dairy or refined sugar.

"Guests will learn to make a full menu of classic festive dishes, updated to be a little lighter for a hot Queensland Christmas and to make it easy to accommodate a range of dietary requirements when its their turn to host - everything we make is gluten-free and refined sugar-free, but you wouldn't know it," Kurt says.

"Connecting over food is a core part of any Christmas, so I love that I get to do that with some of the Project Salubrious community in the lead-up.

"I'm really passionate about sharing food knowledge and skills with people, getting them more confident in the kitchen and knowing more about how to get the most from different ingredients and learning who grew them.

"I get people coming up after one of the monthly classes saying 'wow, that class really changed the way I cook' or 'I'm feeling completely re-energised about food' and it makes my day every time. That's what we're here for."

Each ticket includes guidance from chef Kurt Lovell, a sit-down dinner with like-minded foodies and a take-home booklet of the recipes.

Project Salubrious makes sure to keep classes small so that everyone has plenty of time to ask Kurt questions and so the dinner is more intimate.

The menu will consist of a mix of sweet and savoury dishes, including the following:

  • Glazed ham salad with pomegranate, cress, pecans and a ginger syrup
  • Roast turkey breast with cranberry and walnut stuffing, baked vegetables and gravy
  • Raw Christmas pudding with orange custard
  • Christmas punch

Bookings are essential, and tickets are $170.73.
