A new eatery specialising in gourmet grilled cheese sandwiches with all the trimmings is set to open in Moreton Bay next month.

The owners of the popular sandwich chain Melt Brothers will open their new store at Westfield North Lakes, with a grand opening celebration planned for November 11.

This will be the chain’s first store in Moreton Bay and fourth overall, with two restaurants located in the Brisbane CBD and one at Westfield Chermside.

Melt Brothers operations director James Mabey says when the opportunity came to expand into Moreton Bay, they jumped at the chance.

“With Westfield North Lakes being a popular and vibrant space for the community to gather, we saw this as a great opportunity for us to expand into Moreton Bay,” James says.

“We were really pleased with the demographic of the suburb and how busy the centre was, so we knew Melt Brothers would really compliment the area.

“We are excited to open our new kiosk in the main food court and spread the cheesy goodness with the North Lakes community.

“We have hired eight staff members who will be there to offer you a great dining experience.”

Not your usual toastie

Inspired by the range of delicious comfort food on offer in New York's alleyways, Melt Brothers dish up a range of gourmet grilled sandwiches packed full of fresh ingredients and oozing with cheese.

“Toasties have always been a classic comfort food item for many, but what we do at Melt Brothers is jazz them up and make things a little more exciting by using fresh and different ingredients inside the toastie,” James says.

“We have a broad range of toasties that can cater for breakfast, lunch or dinner, as well as lighter meals.

“We have three top sellers, which are consistent across all our stores.

“The first one is called Morning Glory, which has Sriracha mayo, fried egg, maple bacon, cheddar and mozzarella, which is a different take on your classic egg and bacon roll.

“The second is called the Holy Cheezus, and that is made with ham off the bone, tomato chutney, cheddar and mozzarella.

“The third is called the Porky Pig, and that is made with caramelised onion, maple bacon, cheddar, mozzarella and barbecue sauce.”

All are served on fresh artisan sourdoughs, with gluten-free and vegan options also available.

James says the avocado breakfast range is also popular with customers.

“If you’re feeling like something more on the lighter side, we have also developed an avocado on toast range,” James explains.

“We have the classic avo on toast, as well as avo with egg, Dukkah and feta.

“The avo with smoked salmon is also pretty tasty.”

In addition to selling toasties, Melt Brothers also have a range of side bites to choose from including hashbrowns, mozzarella sticks, cheesy chicken chips, fries, extra-cheesy loaded fries, smoothies, thick shakes, coffee and soft drinks.

Grand opening special

To celebrate the opening of Melt Brothers at North Lakes, James says customers will have the opportunity to try a half price toastie when the store opens on Saturday, November 11 between 8am-2pm.

“All you need to do is give us some love on Instagram by following us, then show the team and you can enjoy our classic Mouse Trap toastie for half price,” James says.

“The Mouse Trap is made with cheddar, mozzarella, Dijon mustard and thyme.”

This deal is limited to one toastie per person.
